HOUSE CIDER 

The first edition of our house cider, Tagwerk quince cider is 5.5% ABV, fermented with organic quince juice. The heady aroma of golden quince is complex, spicy with immersions of red apple, ripe pear, citrus, tingling acidity & a mild dry finish.   

Expect many variations of our house cider as we develop and explore. 

RANSOM NOTE EISBOCK

In collaboration with Beau's All Natural Brewery

9.0% ABV | 28 IBU

Take your time as the flavour unfolds - learn about the Eisbock process & what makes it so rare & limited.

Eisbock is aged in an oak foeder (that we borrowed from Beau's) in below freezing temperatures for 8 weeks. We sent Beau's a ransom note to see if they could figure out where their foeder went. In celebration of the May pole tradition, life & more-ish beer, we present; Ransom Note Eisbock. 

Fine, dense bubbles make up a creamy head, sitting on a hazelnut coloured body. Subtle aromatics open up after pouring; fresh honey followed by a nuance of pine needles & a sharp warming alcoholic flavour. Deeply satisfying more-ish complexity & a smooth mouthfeel that signal notes of vanilla & peach. Hop impressions start to rise & fine bitterness push sweeter tones into the background. Vanilla & drying oak notes from the foeder raise their head and noble bitterness continuously push forward. With every sip repeating the subtle nuances of flavour spikes & funk from the wood, observe the battle of sweet vs noble bitterness & a warming 9% ABV.

Following the May pole ritual & our principal to be a business with a force for good, we ask that upon purchasing Ransom Note Eisbock, you donate 2 non-perishable food items to your local food bank - monitored in good faith. This limited bottle run has 993 bottles & a maximum 12 bottle purchase limit to make sure that everyone gets to try this beautiful rarity.
